Summer is back and Ben Spalding returns to Budapest!

Acclaimed London-based chef Ben Spalding runs PuzzleProjects which offers a fresh take on hospitality consultancy for all sectors, the curation and delivery of food and music events (from intimate gatherings to festivals), catering and food production for corporate, public and individual clients globally and at all levels, film, design and more. Ben brings over fifteen years’ experience and hard-earned expertise in the hospitality industry to his role. Having trained at some of the world’s finest Michelin-starred restaurants including 28+ in Gothenburg, Per Se, Restaurant Gordon Ramsay, The Ledbury, Bagatelle, The Fat Duck, Le Manoir, Vue de Monde and L’Enclume, he returned to London in 2011 and delivered his unique style of cooking with great success at restaurants including Roganic, John Saltand Aqua in the Shard, winning both personal and professional acclaim along the way. His awards include 3 AA Rosettes at Roganic, the Zagat 30 under 30 award, the ShortList Brit List, the Times 100 Most Influential PeopleWanting to break away for the stiff formality often associated with fine dining and Michelin-starred establishments, Ben created his own successful business, PuzzleProjects, and simultaneously launched several innovative dining concepts including NoRules, WorldDinners and StrippedBack, an exciting, accessible dining experience which played an integral part in the development of London’s high-end street food movement. Huge global interest saw Ben take this concept across Europe and on to the legendary music festival Coachella in Los Angeles. Now he is back to Budapest for 4 days: 2 days for seated lunch and dinner and another 2 days special for his street food creations in the heart of the city. Early bird tickets are available until 11th June for 16.000 HUF, after that tickets cost 19.000 HUF. The lunch & dinner session start 11:30 & 18:30 on the 23rd and 24th June, the venue will be confirmed soon, the streetfood sessions start  at 11:30 at Zsiráf on the 26 & 27.

• Mr.Mung – Umami packed mung beans, tom yum mayonnaise, crispy onions & endive

• Salmon Vs Oyster – Lightly cooked salmon belly, oyster emulsion, spices, mango & citrus

• Beef Beef Beef – Beef Featherblade brined, braised & glazed, soured cream, toasted pumpkin seeds, summer greens, melted plum & proper beef gravy

• Sweet Maple – Whipped sweet cream cheese, crispy carrot, mint, oatmeal & iced lemon thyme

• Closing Curtain – surprise

THE VEGETARIAN MENU: 5+1 course menu with drinks & cocktails

• The Nibbles – surprise

• Mr.Mung – Umami packed mung beans, tom yum mayonnaise, crispy onions & endive

• 20 ingredient salad – twenty of June’s finest vegetables, herbs & fruits seasoned with shiso leaf dressing

• Proper polenta – Runny White polenta flavoured with Parmigiano Reggiano, toasted pumpkin seeds, summer greens, melted plum

• Sweet Maple – Whipped sweet cream cheese, crispy carrot, mint, oatmeal & iced lemon thyme

• Closing Curtain – surprise
